Classic new york cheesecake

I baked this cheese cake for a friend’s birthday and it was just perfect and smooth! I just decorated it with gold powder and blueberries However, I used wholemeal butter cookies, also tastes bombe….
in fact, if the cookies already contain a lot of butter, then you need less butter. I always use baking paper or permanent baking foil on the tray or grate, so I never the whole oven “einsaue” me
Still ne question about baking: you write, IM water bath bake so the form wrap with aluminum, then in the water and bake. But you write also put water in the oven … so then without mold in the water … what works better ?
